KOOKOO SABZI ROLL UP
1/2 Bunch (Approx. 1 oz / 28g) Parsley Cilantro Leek Dill 4 Eggs 3 Eggs 1 Tbsp Flour 1/2 Cup Walnuts 1/2 Cup Dried Barberries (Zereshk) Salt, White Pepper, Turmeric, Ground Red Pepper, Curry Powder PREPARATIONS: 1- Mince the herb (fine). DIRECTIONS: 1- Whisk 3 eggs with pinch of salt, turmeric and white pepper until fluffy. 2- Stir in a tablespoon flour and of the minced herbs, and continue whisking. 3- Grease a bakeware/pan and transfer the egg mixture onto the pan. 4- Preheat oven to 355º F (179º C), bake for 5 minutes. 5- Meanwhile, Whisk together 4 eggs, ground red pepper, curry powder, little turmeric, and a pinch of salt in a large bowl, 6- Stir in minced herbs. 7- Remove the pan from oven and add a layer of herb mixture over the previous egg layer. 8- Place the pan back into the oven and continue baking for 10 minutes over the same previous temperature. 9- Remove the pan from oven. Add a layer of walnuts and dried barberries (zershk). Roll the layer over and place it back into to oven. 10- Give it another 10 minutes over the same (355º F / 179º C) temperature. 11- Remove the roll and cut down into your preferred size.
