CHEESE PRETZEL

1 1/3 Cup All Purpose Flour Mozzarella String Cheese (5 to 7) / 6 oz (170g) 1 Tsp Olive Oil 2 Tsp Yeast 1 Tbsp Baking Soda 1 Tsp Salt 1 Tbsp Sugar Salt or Garlic Salt PREPARATIONS: 1- Heat water to 110º F (43º C). 2- Cut the mozzarella string cheese sticks lengthwise in four pieces. DIRECTIONS: 1- Combine salt, yeast and sugar in a bowl. 2- Stir in 3/4 Cup of warm water and mix thoroughly. 3- Gradually, add the flour to the mixture. 4- Knead the dough for 5 to 10 minutes. 5- Add a tsp olive oil and roll the dough in it to grease. Cover the bowl with plastic wrap and allow to rise for an hour at the room temperature. 6- In a separate bowl, dissolve baking soda in a cup of warm water. 7- Divide the dough in 6 equal pieces. Roll out each peace into a 24 x 2 inch rectangle. 8- Place the sliced cheese in the center and wrap the dough around it creating a rope. 9- Make a U shape and cross the rope over to create a knot. 10- Dip the dough into the baking soda water. 11- Place the pretzel onto a cookie pan covered with parchment paper. 12- Rest the dough for 10 more minutes before baking. 13- Preheat oven to 480º F (232º C), Bake the pretzels for 8 minutes. 14- Remove the pretzel from oven, brush with olive oil. 15- Sprinkle with salt or garlic salt.
