8 oz (227g) Carrots 1/4 Cup (Zereshk) Dried Barberries 2 Eggs 1 Small Onion 1/4 Cup Bread Crumbs 1/2 Tsp Ground Ginger Parsley Vegetable Oil Salt & Pepper Preparations: 1- Grate the carrots and the onion. Directions: 1- Combine the grated carrots and onion in a large bowl. 2- Stir in bread crumbs, eggs, ground ginger, salt and pepper, and dried barberries (Zereshk). 3- Fry the frittata in vegetable oil on both sides. 4- Serve with fresh parsley.
