Skirt Steak Kabab
1 lb (454g) Skirt Steak 1 lb (454g) Plain Yogurt 1 Bunch 2.5 oz (71g) Green Onions 1 Bunch 2 oz (57g) Cilantro 3 Garlic Cloves 1 Tsp Ground Coriander 1/2 Tsp Ground Cumin Salt and Pepper Pita Bread 1 Cucumber Preparations: 1- Slice the green onions. 2- Mince the cilantro. 3- Slice the skirt steak. Directions: 1- In a large bowl, combine green onions and cilantro. 2- Mash the garlic cloves over the herbs. 3- Garnish with salt, pepper, ground coriander and cumin. 4- Add the plain yogurt. Stir thoroughly. 5- Keep half of the mixture to use when serving (Sauce). 6- Stir the sliced skirt steak into the mixture. 7- Cover the bowl with plastic wrap or lid. 8- Marinate the beef in the refrigerator for at least 4 hours or overnight. 9- (If using wooden or bamboo skewers) Soak the skewers in water 10 minutes before removing the marinade from the refrigerator. 10- Skewer (optional) Grill the skirt steak over a grill pan or direct fire for 5 to 10 minutes on each side. 11- Serve with pita bread and side with cucumber, cilantro, green onions, and the remaining of the sauce.
