Curry Rice
1 lb (454g) Chicken Drumsticks 2 Cups Rice 1 Large Potato 1 Tsp Curry Powder 1/4 Tsp Ground Cumin 1 Onion 1 Garlic Clove 2 Tbsp Vegetable Oil 2 Tbsp Vegetable Oil 4 Bay Leaves Salt Preparations: 1- Slice the onion and potato. 2- Wash/Rinse the rice. Directions: 1- Fry the onions with vegetable oil until golden. 2- Place the chicken drumsticks, garlic clove and bay leaves onto a pot. 3- Add salt and enough water to cover the chicken drumsticks. 4- Cover the pot and simmer for 45 minutes or until cooked. 5- Transfer the rice over to a large pot. 6- Transfer in 2.5 cup of the chicken broth along with the garlic clove to the rice pot. 7- Mash the garlic clove. 8- Add the fried onions, curry powder, salt and ground cumin. (optional: add red pepper) 9- Stir thoroughly. 10- Simmer the rice for 10 minutes or until the water is evaporated. (Medium low heat) 11- Meanwhile debone the chicken drumsticks. 12- Transfer the chicken on top of the cooked rice. 13- Cover the pot with a napkin and a lid and cook for 30 minutes over medium heat. 14- Fry the potatoes with vegetable. (Add salt) 15- Serve the curry rice with the fried potatoes.
