CRANBERRY CHEESECAKE

8 oz (227g) Cream Cheese 3 Tbsp Sour Cream 1 Egg 1 1/2 Tbsp Unsalted Butter 2 oz (57g) Biscuits 1/4 Cup Sugar 1 Tsp Sugar 1 Tsp Corn Starch 1/4 Tsp Flour 1/4 Tsp Vanilla Extract Cranberry Jam (1 Tbsp) Vegetable Oil (1/4 Tsp) PREPARATIONS: 1- Crack/grind the biscuits. 2- Wrap aluminum foil around a springform pan or two (depending on the size) as shown in the video. 3- Grease the springform pans with vegetable oil. DIRECTIONS: 1- Combine biscuit crumbs and a tsp sugar. 2- Melt the butter and stir in the biscuit crumbs. Keep stirring until butter is well mixed in the crumbs. 3- Cover the surface of the springform pans with the biscuit mixture evenly. 4- Preheat oven to 350º F (177º C), bake the biscuits for 8 minutes. 5- Remove the pans from oven and set aside to cool off. 6- In a large bowl, combine cream cheese and 1/4 cup sugar. 7- Add an egg to the mixture and continue whisking for few minutes. 8- Stir in vanilla extract, sour cream, corn starch and flour. 9- Fill up the springform pans with the mixture. 10- Top with as much as cranberry jam as you prefer. 11- Place the pans in a larger bakeware. 12- Fill the bakeware enough water to cover half of the springform pans. 13- Preheat oven to 350º F (177º C), bake the cheese cakes for an hour. 14- Turn off the oven. Open the door ajar to allow the heat escape and let them seat in the oven for another hour to cool down. 15- Remove the cheese cakes and set them aside until they cool off thoroughly. 16- Keep the cheese cakes in refrigerator for at least 4 hours before serving.
