FIG JAM
1 lb (453g) Fresh Figs 10 oz (283g) Sugar 1 Cinnamon Stick 2 Green Cardamoms (whole) 1 Tbsp Lemon Juice 1/8 Tsp Vanilla Extract 1/4 Tsp Saffron 1/3 Cup Boiling Water PREPARATIONS: 1- Soak saffron in 2 tbsp boiling water for half an hour. 2- Boil Water. DIRECTIONS: 1- Place figs into a pot, add sugar and allow to sit for 7 to 8 hours at room temperature. 2- Simmer the pot over medium heat for about 15 minutes or until the sugar is thoroughly dissolved. 3- Remove the foam using a spatula. 4- Add cinnamon and cardamoms to the pot, and stir. (Crack the cardamoms before dropping into the pot. 5- Simmer the pot for 15 more minutes or until the figs start to look translucent. 6- Add lemon juice, vanilla extract and soaked saffron (approx. 1 tbsp) to the pot, and stir well. 7- Add 1/3 cup of boiling water and continue to simmer for 5 minutes.
