1 lb (453 g) Zucchini 1 Bunch Cilantro 1 Small Onion 2 Tbsp Vegetable Oil 2 Garlic Cloves Turmeric, Salt PREPARATIONS: 1- Dice a small onion. 2- Mince 1 bunch cilantro. 3- Peel and slice 1 pound zucchini squash. 4- Boil 1 cup of water. DIRECTIONS: 1- Fry diced onions with 2 tbsp vegetable oil in a pan until golden. 2- Mash 2 garlic cloves into the pan and stir. 3- Add turmeric as preferred. 4- Add the minced cilantro to the pan, stir and continue frying for few more minutes. 5- Now add the squash, add salt and one cup of boiling water and stir. 6- Cover the pot with a lid and simmer for 15 minutes.
