YOKHEH
(YOUKHEH OR KAAK)

INGREDIENTS: 1 1/3 Cup All-Purpose Flour 1/2 Cup (2 oz / 57g) Walnuts 1 Egg 4 Tbsp (2 oz / 56g) Unsalted Butter 1 Tbsp Powder Sugar (Confectioners Sugar) 1/2 Cup Sugar 1/2 Tsp Ground Cardamom 1 Tsp Ground Cinnamon 1/2 Tsp Salt 1 Tbsp Yeast (Instant) PREPARATIONS: 1- Warm 1/4 cup water to 110º-120º F (43º-49º C). DIRECTIONS: 1- DOUGH: 1- Melt the butter and transfer to a large bowl. 2- Stir in an egg and salt. Whisk to mix. 3- In a separate container, combine yeast and powdered sugar in 1/4 cup of warm water. 4- Add the mixture to the large bowl. 5- While whisking, gradually add flour. Adjust the flour if needed. 6- Knead the dough for 10 minutes. 7- Transfer the dough to a container and cover with a plastic wrap and set aside to rise for 2 hours. FILLING: 8- Transfer walnuts, ground cardamom, ground cinnamon, 1/2 cup sugar to a grinder. 9- Grind all the ingredients together. 10- Transfer the dough to a well floured working surface. 11- Divide the dough to 4 or 8 (depending on how thin or thick you want the Yokhehs to be). 12- Roll out the dough to a very thin sheet. Continue sprinkling flour over the dough while rolling out. 13- Pre Heat a grill pan, Lay the dough over the pan and flip over every 10 to 15 seconds. 14- Right before you think the dough is getting crispy, sprinkle the filling over the bread evenly as much as you would like and roll/wrap the dough around the filling. 15- Transfer the Yokhehs to working surface while still hot (use hot gloves to avoid skin burn). 16- Cut the Yokhehs in small pieces. 17- Allow the Yokhehs to cool down and become crispy. The result should be a very crispy (chips like) product.
