RAVIOLI

3 Cups All-Purpose Flour 4 Eggs 1 Egg Yolk 15 oz (425 g) Ricotta Cheese 1/2 Cup Grated Parmesan Cheese 1/2 Cup Shredded Mozzarella Cheese 1 Bunch Fresh Spinach 1 Cup Marinara Sauce marinara sauce 2 Tbsp Olive Oil 1/2 Tsp Salt Salt, Black Pepper Powder PREPARATIONS: 1- Mince the spinach. 2- Cook the minced spinach (in a microwave). 3- Allow the spinach to cool down for few minutes. 4- Squeeze the liquid out of the spinach. DIRECTIONS: 1- Combine flour, 1/2 tsp salt in a big bowl. 2- Crack 4 eggs into the bowl. 3- Add olive oil to the bowl. 4- Mix thoroughly. 5- Knead the batter for 10 minutes on a working surface. 6- Place the batter back into the bowl, cover with a lid or plastic wrap, allow the batter to rest for half an hour. 7- In a separate bowl, Combine ricotta cheese, grated parmesan, shredded mozzarella and mix well. 8- Add the cooked spinach, salt and black pepper powder to the cheese mixture and continue mixing until the spinach is completely mixed and spread in the mixture. 9- place the batter on a well floured working surface. 10- Roll out the batter with a rolling pin in a thin rectangle. 11- Trim the uneven edges. 12- Cut the batter horizontally into two identical 5 inch rectangles. 13- Place a tsp of cheese/spinach filling on top of one of the batter rectangles, repeat the step few times more (few inches apart). 14- In a small container, mix an egg yolk with a tbsp of water and stir until well mixed. 15- Brush the batter with the egg mixture around the filling (It will glue the batter layers). 16- Place the second batter rectangle on top of the filling/batter. 17- Press down around the filling to seal. 18- Cut into squares with a pastry cutter, repeat with remaining dough and filling. 19- Mix 2 to 4 cups of boiling water with salt (approx. 2 to 4 tbsp) in a pot. 20- Bring the water to a boil, drop ravioli into the boiling water gently. 21- Simmer ravioli for few minutes or until they float to the top and are tender. 22- Remove and drain ravioli using a strainer. 23- Add marinara sauce and parmesan cheese.
