
Fried Rice (Veggie)
1 Cup Brown Rice 8 oz (227g) Broccoli 1 Egg 1 Bell Pepper 1 Carrot 1 Small Onion 0.4 oz (11g) Ginger Root 3 Tbsp Soy Sauce 2 Tbsp Olive Oil Ground Red Pepper Salt Preparations: 1- Dice the onions, bell pepper, broccoli, and the carrot. 2- Mince the ginger root. Directions: 1- Combine brown rice with 2 cups of water and salt in a pot. 2- Over high heat, bring the mixture to a boil. 3- Lower the heat to low, cover the pot and continue simmering for 45 minutes or until tender. 4- Turn off the heat and allow the rice to cool down. 5- Fry the onions, carrot, bell pepper, broccoli and ginger with olive oil. 6- Crack the egg and scramble in the vegetables. 7- Stir in the cooked brown rice. 8- Stir in the soy sauce and ground red pepper (and salt if needed). 9- Continue frying for 5 to 10 more minutes.
