
FRENCH MACARONS
1 Cup Ground Almonds 1 Cup Powdered Sugar 3 Egg Whites 1/4 Cup Sugar 1/8 Cup Cream Of Tartar 4 Tbsp Unsalted Butter 1/2 Cup Cream Cheese 1/4 Cup Peppermint Candies Food Coloring PREPARATIONS: 1- Separate egg yolks from whites. 2- Crack/break peppermint candies. DIRECTIONS: 1- Sift flour and ground almonds in a large bowl and stir until well combined. 2- In a separate bowl, whisk white eggs until stiff. 3- Add sugar and cream of tartar to the bowl and continue whisking until well mixed. 4- Add the four to the egg mixture and stir in folding form as shown in the video. 5- Separate to as many color macarons you wish to make and add food color of your choice to each bowl. 6- Cover a cookie pan with parchment paper, transfer the batter to pastry bag and pipe in any size you would like on parchment paper. (leave inch or two in between). 7- Tap the cookie sheet on working surface to release the trapped air. 8- Preheat Oven to 300º F (149º C), bake the macarons for 10 to 15 minutes. 9- Remove the cookies from the oven and set aside to cool down. 10- Meanwhile start preparing the cream filling. CREAM 11- Combine butter, cream cheese and cracked peppermint in a bowl and whisk thoroughly. 12- Sandwich macaron cookies with filling.
