CURRY STEW
2 Lbs (907g) Boneless Chicken Breast
13.5 oz (400ml) Coconut Milk (1 Can)
1 Onion
2 Tbsp Unsalted Butter
1 Tsp Garam Masala Seasoning
1 Tsp Curry Powder
Salt, Ground Red Pepper
PREPARATIONS:
1- Dice the onion.
2- Slice the chicken breast.
DIRECTIONS:
1- Fry the onions with butter in a large pot.
2- Stir in garam masala seasoning and curry powder. Continue heating for few minutes.
3- Stir in sliced chicken breast.
4- Over medium heat, cook/fry the chicken for 10 minutes.
5- Add water, stir and cover the pot with a lid.
6- Over medium heat, simmer for 45 minutes.
7- Add salt and stir in coconut milk. Stir thoroughly and continue to boil until it thickens to preferred stew thickness.
