Sponge Cake 1 lb (454g) Ricotta Cheese (Whole Milk) 1/3 Cup Heavy Whipping Cream 1/2 Chocolate Chips 1 oz (28g) Unsweetened Baking Chocolate 2 Tbsp Unsalted Butter 1/2 Cup Sugar 1/3 Cup Sugar 1 Tbsp Corn Syrup 1/4 Tsp Cinnamon Powder 1/2 Tsp Vanilla Extract 1/4 Tsp Vanilla Extract 1 Tbsp Orange Zest 1/2 Orange Preparations: 1- Bake the sponge cake. Directions: FILLING: 1- Whisk ricotta cheese, sugar (1/2 cup), cinnamon powder, vanilla extract (1/2 tsp), chocolate chips, and orange zest in a large bowl. 2- Keep the filling in refrigerator until the glaze is ready. 3- Combine sugar (1/3 cup) with 1/4 cup of water in a saucepan. 4- Heat the mixture until the sugar completely dissolved. 5- Squeeze half of fresh orange into the mixture. Stir thoroughly and turn the heat off. 6- In a separate bowl, Add baking chocolate, vanilla extract (1/4 tsp), corn syrup, butter, and heavy whipping cream. 7- Bring water to a boil. While stirring, melt the mixture with the indirect heat. (Note: Remove as soon as all the ingredients are mixed thoroughly. Do not over cook) 8- Cut the sponge cake in half. 9- Brush the sponge cake with the sugar mixture. 10- Spread the ricotta cheese mixture over the surface evenly. 11- Lay the sponge cake half over the filling. 12- Top the cassata with the melted chocolate mixture. Keep in refrigerator for at least 30 minutes before serving.
