Lemon Charlotte Russe

24 Ladyfingers 4 Fresh Lemons 4 Eggs (Yolk) 1 Cup Milk 1/2 Cup Sour Cream 1/2 Cup Heavy Whipping Cream 1 Cup Sugar 1/2 Cup Sugar 2 Tsp Unflavored Gelatin 1/4 Tsp Vanilla Extract PREPARATIONS: 1- Juice the lemons. You'll need 2 separate cups of fresh lemon juice. (use more lemons if needed). 2- Separate egg yolks and whites. DIRECTIONS: 1-Transfer one cup of fresh lemon juice to a saucepan. 2- Stir in half cup sugar. Boil the mixture for about 10 minutes over medium heat. 3- Transfer the mixture to a small bowl. 4- Take 2 four inch (Mini) round springform pan and cover the sides with parchment paper as shown in the video. 5- Soak ladyfingers in the lemon mixture and arrange them on the bottom of the pan (sugar side up) and around the pan (sugar side out) until cover the whole pan. Cut some of the ladyfingers in a small size to fill in between. 6- Combing milk with vanilla extract in a separate pot. Heat the mixture until it just starts boiling. 7- Meanwhile, whisk the egg yolks until stiff. 8- While whisking, mix in a cup of sugar gradually and continue whisking until custard/creamy. 9- Add the mixture to the milk mixture. 10- Over medium-low heat, while stirring, boil the mixture until thickens (Approx. 5 Min). 11- In a small container, combine one cup lemon juice with unflavored gelatin and stir until well mixed. (Place the container in a hot water while mixing to avoid clumping). 12- Back to the milk mixture, turn of the heat and stir in the gelatin mixture to the pot. 13- Place a dozen ice cube in a large bowl and add few cups of water and allow few minutes to cool down. 14- Set the milk custard pan into the cubes pot and stir the custard until it just starts thickening. 15- In a separate container, whisk sour cream and heavy whipping cream until fluffy. 16- Add the cream to the custard and fold until well combined. 17- Fill the ladyfinger molds with the creamy mixture. 18- Keep the refrigerate the molds for at least 4 hours. 19- Remove the molds from the refrigerator, remove the parchment papers and un mold the charlotte russes. 20- Tie a ribbon of your choice around the charlotte russe. Top with whipped cream, slice of lemon and fresh mint.
