
Shirin Polow (Sweet Rice)
2 Cups Rice 1.5 Lb. (680g) Chicken Thigh 2 Oranges 0.7 oz (20g) Sliced Almonds 2 Bay Leaves 2 Tbsp Sugar 2 Tbsp Salt 1/4 Tsp Saffron 1 Tbsp Vegetable Oil 1 Tbsp Vegetable Oil Turmeric, Paprika, Salt Preparations: 1- Soak rice with water and 2 tbsp salt for at least 2 hours or overnight. 2- Thin Peel the skin off of the oranges. 3- Soak saffron in 1 tbsp boiling water for 20 minutes. Directions: 1- Transfer the orange skin to a small pot. 2- Add enough water to cover the orange skin in 1 inch. 3- Bring the water to a boil and continue boiling for 5 more minutes. 4- Drain the orange skin and repeat the step 2 to 3 one more time. 5- Using a strainer spoon, Transfer the orange skin onto a small bowl filled with cold water. 6- Soak the orange skin for one hour. 7- Place the chicken thighs in a pot. Add salt, bay leaves and water. 8- Cover the pot with a lid and simmer for 45 minutes or until the chicken thighs are cooked. 9- Combine sugar and a cup of water in a small pot. 10- Bring the mixture to a boil. 11- Add the orange skin to the boiling mixture. 12- Boil the orange skins for 10 minutes or until dense. 13- Keep half a cup of the chicken broth to use later. 14- Garnish the chicken with turmeric and paprika and continue simmering for 5 more minutes. 15- Boil the soaked rice until tender. 16- Drain the rice thoroughly and rinse with cold water. 17- Debone the chicken thighs. 18- Grease a large pot with vegetable oil. 19- Transfer of half of the rice over the pot surface. 20- Add a layer of the chicken thighs followed by a layer of the orange skin and sliced almonds. 21- Top with the remaining of the rice. 22- Add the soaked saffron to a corner. 23- Pour the chicken broth over the rice evenly. 24- Add a tbsp of vegetable oil. 25- Cover the pot with a napkin and a lid. 26- Over medium-low heat, cook the Shirin Polow for 30 to 40 minutes.
