RAISIN COOKIE
1.7 oz (50g) Raisins 1 1/4 cup (75g) All Purpose Flour 1/2 Tbsp All Purpose Flour 1 Cup (100g) Powdered Sugar 1/4 Cup (50g) Unsalted Butter 1 Egg 1/8 cup (5g) Vegetable Oil 1/8 Tsp Vanilla Extract PREPARATIONS: None. DIRECTIONS: 1- Combine powdered sugar, butter and vegetable oil in a large bowl. Stir well. 2- Add an egg and whisk until well combined. 3- Add vanilla extract. 4- Stir in flour gradually and whisk all the ingredients are well mixed. 5- In a separate contains, roll the raisins in a pinch of flour until they all are covered by flour. 6- Mix in the raisins to the batter. 7- Cover a cookie pan with parchment paper. 8- Place spoons of the batter two inches apart on the cookie pan. 9- Preheat oven to 400º F (204º C), bake the cookies for 10 minutes or until it desired color is reached.
