"Spicy Vegetable Relish"
0.5 oz (14g) Italian Parsley 2 Eggplants 1 Carrot 2 Chili Peppers 2 Red Bell Peppers 2 Tomatoes 1 Onion 3 Garlic Cloves 2 Tbsp Olive Oil 1 Tsp Sugar Salt Preparations: 1- Mince the parsley. Directions: 1- Roast the eggplants, carrot, chili peppers, red bell peppers, and the tomatoes. 2- Grate the onion in a small pot. 3- Stir in the garlic cloves and olive oil. 4- Sauté the grated onion. 5- Peel the skin off the roasted vegetables. 6- Transfer the roasted veggies and fried onions onto a large pot. 7- Add salt and sugar. 8- Mash all of the ingredients together. 9- Over medium heat, simmer the mixture until thickened. 10- Stir in the minced parsley and serve.
