COCONUT COOKIES

4 oz (113 g) Shredded Coconut 4 oz (113 g) Powdered Sugar 1 Egg (white) 1/4 Cup Pistachios (Shredded) PREPARATIONS: 1- Shred or Slice the pistachios. DIRECTIONS: 1- Whisk an egg white. 2- Add powdered sugar continue whisking until stiff. 3- Add shredded coconut and stir until well blended. 4- Spray a bakeware with cooking spray or grease with vegetable oil. 5- Place scoops of the mixture on the bakeware. 6- Place few sliced pistachios on top of each cookie. 7- Preheat oven to 275º F (135º C), bake the cookies for 25 minutes.
