Black Eyed Peas Patties
6.5 oz (182g) Black Eyed Peas 0.5 oz (14g) Italian Parsley 2 Tbsp Chick Pea Flour Fine 1 Tbsp Dried Cilantro 1 Red Potato 1 Small Onion 2 Garlic Cloves 1/2 Tsp Cumin Powder Curry Powder Salt, Blak Pepper Preparations: 1- Soak the black eyed peas overnight or at least 8 hours. 2- Mince the Italian parsley. Directions: 1- Transfer the soaked black eyed peas onto a small pot. 2- Add salt and enough water to cover the peas in one inch. 3- Over medium heat, Boil the black eyed peas for 35 to 40 minutes or until well cooked. 4- Using a strainer spoon, transfer the peas over to a large bowl. 5- Mash the peas thoroughly. 6- Mash garlic cloves. 7- Grate the onion and red potato and add to the bowl. 8- Add the parsley, dried cilantro, black pepper, curry powder, cumin powder, chick pea flour fine, and salt. 9- Stir the mixture thoroughly. 10- Make patties and fry with vegetable oil.
