2 oz (57g) Pasteurized (or 2 Large) Egg Whites 1/2 Cup (3.5 oz / 100g) Sugar 6 oz (170g) Dark Chocolate 1/8 Tsp Cream Of Tartar 1/4 Tsp Vanilla Extract 1/2 Tbsp Unflavored Gelatin 1 Wafer Sheet Salt Preparations: 1- Using a round shape cookie cutter, cut our wafer sheet. Directions: 1- Combine Egg whites, cream of tartar, and a pinch of salt in a large bowl. 2- Beat the egg whites until creamy. 3- Gradually, Whisk in the sugar. 4- Stir in vanilla extract. 5- In a separate bowl, dissolve gelatin in 1.5 tbsp water. 6- Heat up the gelatin mixture in microwave for 20 to 40 seconds or until well dissolved. 7- Stir the gelatin mixture into the egg whites. 8- Keep the mixture in refrigerator for 5 to 10 minutes. 9- Using a pastry bag, top the wafer sheet with the egg white mixture. 10- Keep the pastries in refrigerator for 3 to 4 hours. 11- Melt the dark chocolate right before removing the pastries from the refrigerator. 12- Deep the pastries into the melted chocolate to cover with a thin layer of chocolate. 13- Set aside for 10 minutes to harden up or keep in refrigerator.
