Ash e Maash va Piaz
(Mung Beans and Onion Soup)
1 lb (454g) Stew Beef 1/4 Cup Mung Beans 1/3 Cup (Medium-Grain) Rice 1/4 Cup Lentils 1 Cup (Canned or Cooked) Red Beans 1/3 Cup (Canned or Cooked) Black Eyed Peas 3 Onions Turmeric, Salt and Pepper Vegetable Oil Cinnamon Powder Preparations: 1- Chop one onion. 2- Slice two onions. Directions: 1- Place one chopped onion along with the stew beef in a pot. 2- Add turmeric and enough water (boiling water) to cover the beef. 3- Cover the pot and simmer for 2 hours over medium heat or until the beef is cooked thoroughly. 4- Remove the beef from the pot and place in a large bowl or container. 5- Stir rice, lentils, and the mung beans to the pot. 6- Cover the pot and continue simmer for 40 minutes. 7- Shred the cooked beef. 8- Stir the beef back into the mixture along with red beans and black eyed peas. 9- Add as much as salt and pepper you would prefer. 10- Stir the ingredients and allow to cook for another 15 to 20 minutes before serving. 11- Fry the sliced onions with vegetable oil. 12- Stir in turmeric. 13- When serving top with the fried onions and cinnamon powder.
