2 Eggplants 2 Tbsp All-Purpose Flour 1/2 Cup Cheddar Cheese 1/3 Cup Cheddar Cheese Herb Croutons 1 Cup Heavy Whipping Cream 1 Onion 1 Garlic Clove Dried Oregano Salt, Black Pepper Vegetable Oil Preparations: 1- Grill the eggplants and peel the skin off. 2- Mash/Dice the grilled eggplants. 2- Dice the onions. Directions: 1- Fry the onions with vegetable oil until golden. 2- Stir in the onions to the eggplants. 3- Mash a fresh garlic clove over the mixture. 4- Garnish with salt, pepper and dried oregano. 5- Stir in cheddar cheese (1/2 cup) and croutons. 6- Transfer the mixture onto a casserole dish. 7- In a separate container, combine flour and heavy whipping cream. 8- Pour the cream over the casserole. 9- Top with a layer of cheddar cheese (1/3 cup). 10- Preheat oven to 300º F (149º C), cook the casserole for 30 minutes.
