Chicken Mushroom Julienne
1/2 lb. (227g) Chicken Breast 1 lb. (454g) Mushrooms 3.5 oz (100g) Mozzarella Cheese 4 oz (113g) Sour Cream 1 Tbsp Unsalted Butter 1 Tbsp Unsalted Butter 1 Tbsp All-Purpose Flour 1/4 Tsp Ground Nutmeg 1 Onion 1 Garlic Clove Salt, Black Pepper Preparations: 1- Slice the onion and mushrooms. Directions: 1- Place the chicken breast onto a small pot, add salt and enough water to cover the chicken breast. 2- Cover the pot and over medium heat simmer for 20 minutes. 3- In a large pot, fry the onions with 1 tbsp unsalted butter until golden. 4- Mash in a fresh garlic clove. 5- Stir in the sliced mushrooms, garnish with salt and pepper. 6- Continue frying for 10 more minutes over medium heat. 7- Remove the cooked chicken breast from the pot. 8- Using forks, shred the chicken breast. 9- Add the shredded chicken breast to mushrooms in the pot and continue frying for 5 to 10 more minutes. SAUCE: 10- Melt a tbsp unsalted butter in a small pot. 11- Stir in flour and sour cream. 12- Garnish with ground nutmeg. While stirring, continue heating for 2 minutes. (medium-low heat) 13- Transfer the mushroom/chicken mixture to one casserole dish (or use two small dishes). 14- Cover the mixture with a layer of the sauce. 15- Top with a layer of mozzarella cheese. 16- Preheat oven to 375º F (190º C), bake the julienne for 10 minutes or until the cheese turns golden.
