Artichoke Spinach Manicotti
8 oz (227g) Manicotti 8 to 10 Artichoke Hearts 4 oz (142g) Baby Spinach 4 oz (113g) Mozzarella Cheese 2 oz (57g) Mozzarella Cheese 1 Cup Parmesan Cheese 15 oz (425g) Ricotta Cheese 1 Cup Alfredo Sauce 1 Cup Alfredo Sauce 1 Bunch (4 oz / 113g) Green Onions 1 Egg Ground Red Pepper Dried Basil, Dried Oregano Salt, Black Pepper Preparations: 1- Grate the mozzarella cheese. 2- Steam Cook or microwave (2-3 min) the baby spinach and set aside to cool down. 3- Chop the artichoke hearts. 4- Chop the green onions. Directions: 1- Combine the grated mozzarella (4 oz), parmesan, and ricotta cheese in a large bowl. 2- Add an egg, and as much as salt and pepper as you'd prefer. 3- Add dried basil, oregano and ground red pepper. 4- Stir in the artichoke hearts, green onions. 5- Drain/Squeeze water our to the spinach and add to the bowl. 6- Stir the ingredients thoroughly until well mixed. 7- Bring 6 cup of water to a boil. 8- Stir in salt and manicotti and continue boiling for 7 more minutes over medium heat. 9- Drain and rinse the manicotti with cold water. 10- Cover a bakeware with 1 cup of alfredo sauce. 11- Fill the manicotti with the cheese filling (using a pastry bag) and place onto the bakeware. 12- Top with one cup of alfredo sauce and 2 oz mozzarella cheese. 13- Preheat oven to 350º F (177º C), cook the manicotti for 45 minutes. 14- Garnish with chopped green onions and serve.
