"Cumin & Rice with Chicken"
1/5 lb (680g) Chicken Breast 2 Cups Rice Cumin Approx. 2 Tbsp 3 Tbsp Vegetable Oil 1 Small Onion 3 Bay Leaves Turmeric, Ground Chili Pepper, Salt PREPARATIONS: 1- Combine rice with 2 tbsp salt and 4 cups of water in a large bowl and soak/rest for two hours. 2- Slice the onion. 3- Cut the chicken breast as preferred. DIRECTIONS: 1- Lay the onions on a large pot, lay the chicken breasts over the onions to make a layer. 2- Add bay leaves on top, add turmeric, ground chili pepper and salt. 3- Pour in water until it barely covers the chicken breasts. 4- Cover the pot with a lid and simmer for 25 minutes over medium heat or until chickens are cooked. 5- Drain the soaked rice. 6- Take a large pot, Pour few cups of water and bring to a boil. 7- Add the rice to the pot, simmer until tendered. Remove the foam with a saptula if necessary. 8- Drain the tendered rice and rinse with cold water few times. 9- Take a third pot, transfer half of the rice on to the pot and spread across to cover the pot's surface. 10- Sprinkle one tablespoon of cumin evenly on top rice. 11- Lay the chicken pieces over the rice and add a tsp of cumin over the chicken pieces. 12- Add the rest of the rice to cover the chickens. 13- Add one more tsp of cumin on top of the rice. 14- Combine 2 tbsp vegetable oil with 1/3 cup of boiling water, stir well and pour over the rice evenly. 15- Cover the pot with a large napkin to absorb the steam when simmering, and cover with a lid. 16- Heat the pot for 25 minutes over medium heat. 17- Stir before serve.
