YOGURT SOUP
"Ash e Mast, Persian soup"
2 Cups Plain Yogurt 1/2 Cup Rice 1 Onion Sorrel, Leek Chives, Mint Turmeric, Salt 2 Tbsp Vegetable Oil PREPARATIONS: 1- Dice the onion. 2- Mince the herbs (Mint: leaves only). 3- Wash and drain the rice. 4- 6 cups boiling water. DIRECTIONS: 1- Fry the diced onions in a pot with 2 tbsp oil until translucent. 2- Add turmeric to the pot and continue frying for 5 more minutes. 3- Add the rice to the pot, fry for 2 or 5 minutes and add boiling water until it covers the mixture. 4- Simmer for 15 minutes or until the rice becomes tender. Add more boiling water (if needed). 5- Add the minced herbs to the pot, stir well and continue frying for few minutes. 6- Add boiling water and simmer for 5 minutes. 7- Turn the heat off and add yogurt to the pot. 8- Add salt and stir thoroughly. 9- Heat the pot for 5 minutes or until just simmering.
