Turkey Brining Recipe
10 Lbs. (4.5kg) Turkey 1/2 Cup Salt 1/2 Gal (8 Cups) Apple Juice 4 oz (113g) Unsalted Butter 1 Cup Turkey Stuffing 4 Garlic Cloves 2 Oranges 0.35 oz (10g) Sage 0.2 oz (6g) Rosemary 0.14 oz (4g) Thyme 5 oz (141g) Brown Sugar 0.07 (2g) 4 Anise Stars 7 Cloves 2 Bay Leaves 1 Lemon 1 Onion Cinnamon Salt, Black Pepper Smoked Paprika 1/2 Gal (8 cups) Ice Water Preparations: 1- Slice the oranges, onion, and lemon. 2- Mince the fresh sage, rosemary, and thyme. 3- Defrost the turkey (if not fresh). Directions: 1- Transfer the sliced oranges, onion, lemon and the minced sage, rosemary and thyme to a large pot. (Keep 1/2 Tbsp of sage, rosemary and thyme for later use). 2- Mash the garlic cloves on top. 3- Add the anise stars, cloves, bay leaves, brown sugar and 1/2 cup sugar to the pot. 4- Add the apple juice, black pepper, and cinnamon, stirring thoroughly. 5- Bring the ingredient to a boil over medium heat. 6- Turn off the heat and allow to cool down to room temperature. 7- Dry the turkey with napkins. 8- Transfer the turkey into a zip bag. 9- Stir the ice water into the apple juice mixture. 10- Pour the mixture into the turkey bag and zip/seal the bag. 11- Keep the turkey in refrigerator for at least 20 hours. (Can be marinated for 2 to 3 days). 12- Remove the turkey from the bag. 13- Dry up the turkey using napkins. 14- In a separate container, mix butter with 1/2 Tbsp of sage, rosemary and thyme. 15- Stuff/inject the mixture under the turkey's skin. 16- Transfer the turkey into a oven bag. 17- Garnish with salt, black pepper and smoked paprika. 18- Stuff the turkey's tommy with stuffing of your choice. 19- Seal the turkey and the oven bag. Poke the oven bag to let the steam escape or Follow your oven bag directions. 20- Preheat oven to 350º F (177º C), cook the turkey for 90 minutes. 21- Open the oven back and continue roasting for 30 more minutes.
