SPINACH FRITTATA
3 oz (85g) Spinach 1 Russet Potato 1 Egg 2 Tbsp Vegetable Oil Salt, Turmeric, Ground Chili Pepper PREPARATIONS: 1- Mince the spinach. 2- Heat the spinach in a microwave for 4 minutes. DIRECTIONS: 1- Using a fork, poke holes into the potato and transfer it to a pot. 2- Add salt and enough water to cover the potato. 3- Cover the pot with a lid and simmer for 30 minutes over medium heat. Or until cooked. 4- Remove the potato and set aside for 10 minutes or so to cool down. 5- Peel the skin off and grate the potato. 6- Add turmeric, salt and ground chili pepper as you'd prefer. 7- Add an egg and transfer the spinach to the grated potatoes and stir thoroughly until all the ingredients are well mixed. 8- Fry the frittata in vegetable oil.
