SPANAKOPITA (SPINACH PIE)

14 oz (397g) Spinach 7 oz (198g) Ricotta Cheese 4 oz (113g) Feta Cheese 1 oz (28g) Parmesan Cheese 1 Bunch (2 oz / 57g) Parsley 1 Bunch (2 oz / 57g) Green Onions 4 to 6 Sheets Fillo Dough 2 Eggs 1 Onion 2 Garlic Cloves 1/2 Tsp Ground Nutmeg 2 Tbsp Unsalted Butter 2 Tbsp Vegetable Oil Sesame Seeds Salt, Black Pepper PREPARATIONS: 1- Dice the onion. 2- Mince the parsley and green onions. 3- Mince the spinach and heat in a microwave for 4 minutes. 4- Dice or crumble the feta cheese. DIRECTIONS: 1- Fry the onions with vegetable oil until translucent. 2- Stir in the green onions. Over medium heat, continue frying for 5 minutes. 3- Mash in two fresh garlic cloves and keep on heating for couple of more minutes. 4- Stir in minced parsley and pre cooked spinach. 5- Turn off the heat and set the pan aside to cool down. 6- Whisk the eggs in a large bowl. 7- Add ground nutmeg, salt and pepper into the bowl. 8- stir in ricotta cheese. 9- Add diced feta cheese to the bowl and fold to combine. 10- Add the mixture to the onion pan and stir until well mixed. 11- Melt unsalted butter in a saucepan. 12- Take a round 9 inch cookie pan and grease with vegetable oil. 13- Lay a fillo dough sheet over the pan and brush with melted butter. 14- Lay another fillo dough over from the opposite direction and brush with butter. 15- Continue step 13 and 14 from the cross sides. 16- Transfer the spinach-cheese mixture over the fillo sheets. 17- Fold the dough sheets back over the mixture, brushing with butter over each fold. 18- Tuck the extra edges under and brush with butter. 19- Slice the spanakopita 4 inch from the center into 4 inch stripes (use a glass for reference as shown in the video). 20- Garnish with sesame seeds. 21- Preheat oven to 350º F (177º C), Bake the spanakopita for 35 minutes.
