RHUBARB & STRAWBERRY BAR (COOKIE)
3.5 oz (100g) Rhubarb 6.5 oz (184g) Strawberries 1/3 Cup Oatmeal 1/4 Cup Oatmeal 1/2 Cup All-Purpose Flour 1/4 Cup All-Purpose Flour 4 Tbsp Unsalted Butter 1/3 Cup Brown Sugar 2 Tbsp Brown Sugar 1 Small Egg 1/4 Tsp Baking Powder 1/4 Tsp Ginger Powder 1/4 Lemon 1/4 Lemon Zest 2 Tbsp Corn Starch 1/2 Tsp Vanilla Extract Salt Preparations: 1- Dice the rhubarb and strawberries. 2- Zest 1/4 of a lemon. Directions: FILLING: 1- Juice 1/4 lemon into a large bowl. 2- Add vanilla extract, corn starch, and 2 tbsp brown sugar. 3- Stir in rhubarb and strawberries. BATTER: 4- In a separate bowl, Combine 1/2 cup flour, 1/3 cup oatmeal, 1/3 cup brown sugar, baking powder, ginger, lemon zest, and a pinch of salt. 5- Add unsalted butter and an egg. Whisk until all the ingredients are well mixed. 6- Cover a 5 by 5 inch bakeware with parchment paper. 7- Transfer 2/3 of the batter onto the bakeware and spread to cover the surface evenly. 8- Add the filling over the batter. 9- Add 1/4 cup flour and 1/4 cup oatmeal to the 1/3 of the (remaining) batter. 10- Mix until it loos crumbled. Adjust with oatmeal and flour to get the desired look. 11- Cover the filling with the crumbled version of the batter, spread evenly. 12- Preheat oven to 375º F (190 C), bake the cookie for 50 minutes.
