PEACH COBBLER
2 Peaches or Nectarines 1 Cup All Purpose Flour 1/4 Cup Sugar 1/2 Cup Sugar 4 oz (113g) Unsalted Butter (1/2 Cup) 1/2 Tsp Vanilla Extract 1 Egg 1/8 Tsp Salt 1 Tsp Baking Powder 1/2 Tsp Cardamom Powder Vegetable Oil PREPARATIONS: 1- Peel the skin and slice the peaches. 2- Leave the butter few minutes at the room temperature to soften prior to start. DIRECTIONS: JAM: 1- Transfer the slice peaches to a small pot. 2- Stir in 1/4 cup sugar. 3- Cover the pot with a lid, simmer for 15 minutes over medium heat. BATTER: 4- Combine 1/2 cup sugar with unsalted butter until well mixed. 5- Whisk in vanilla extract and a egg. 6- In a separate container, combine flour, salt and baking powder. 7- Whisk in the flour gradually. 8- Grease a small bakeware with vegetable oil, transfer the peach jam to the bakeware. Sprinkle cardamom powder and top with the layer of batter. 9- Preheat oven to 350º F (177º C), bake the cobbler for 45 minutes.
