Onion Soup
2 Onions 2 Cups Beef Stock 3.5 oz (100g) Swiss Cheese 1 Garlic Clove 1 Tbsp Olive Oil 1 Tbsp Unsalted Butter 1 Tbsp Apple Cider Vinegar 1 Tbsp All-Purpose Flour 1 Bay Leaf 1/8 Tsp Dried Thyme French Wheat Bread Salt, Black Pepper Preparations: 1- Slice the onions. 2- Chop the garlic clove. 3- Slice the french bread and toast. 4- Grate the Swiss cheese. Directions: 1- Melt the butter in a pot. 2- Stir in olive oil, sliced onions and garlic. 3- Fry the onions over medium heat until golden/brown. 4- Add salt, apple cider vinegar, and flour. 5- Stir in the beef stock, bay leaf, and thyme. 6- Simmer for 15 minutes with the lid on top. 7- Add black pepper, stir thoroughly and transfer the soup onto a small casserole. 8- Cover the soup with the toasted French breads. (As many as it takes to cover the dish up) 9- Top with a layer of grated Swiss cheese. 10- Preheat oven to 350º F (177º C), and bake the soup for 5 to 10 minutes or until the Swiss cheese starts to get golden.
