LATIFEH (SHIRINI LATIFEH)
2.5 oz (70g) 1/2 Cup All-Purpose Flour 1 Cup Heavy Whipping Cream 0.8 oz (25g) 1/4 Cup Sugar 0.8 oz (25g) 1/4 Cup Sugar 2 Large Eggs 1/4 Tsp Vanilla Extract 1/4 Tsp Vanilla Extract 20g Pistachios 1 Tbsp Confectioners Sugar (Powdered Sugar) Preparations: 1- Grind the pistachios. Directions: BATTER: 1- Separate egg whites and yolks. 2- Combine 1/4 cup sugar with egg yolks. Whisk until well mixed. 3- Whisk in 1/4 tsp vanilla extract. 4- Beat the egg whites in a separate bowl until stiff. 5- Add 1/4 cup sugar to the egg whites and continue whisking until creamy. 6- Mix/fold egg white mixture to egg yolks. (don't over mix). 7- Gradually, sift in the flour while folding. 8- Cover a bakeware with parchment paper. Using a pastry bag, transfer (one tbsp at a time) batter over the parchment paper. 9- Sprinkle the batter with confectioners sugar. 10- Preheat oven to 425º F (218 C), bake the cookies for 8 minutes. CREAM: 11- Combine heavy whipping cream, confectioners sugar, and 1/4 tsp vanilla extract. 12- Whisk until creamy. 13- Remove the cookies from oven and set aside for few minutes to cool down. 14- Cover cookies with the cream and cover/sandwich with another cookie.
