Kiwi Bread
2 Cups All-Purpose Flour 2 Kiwis (Approx. 9 oz / 225g) 1 Kiwi 1/2 Cup Shredded Coconut 1 Egg 4 Tbsp Unsalted Butter 1/4 Cup Sugar 1 Tsp Baking Soda 2 Tsp Baking Powder 1/2 Tsp Salt 1 Tsp Vanilla Extract Preparations: 1- Dice two kiwis. 2- Slice one kiwi. 3- Roast the shredded coconut. 325º F (163º C) for 5 Minutes. 4- Keep the butter in room temperature 10 minutes prior to making this recipe. Directions: 1- Beat the egg until stiff. 2- Add butter and vanilla extract and continue whisking until well mixed. 3- In a large bowl, Combine flour, sugar, baking soda, salt, and baking powder. 4- Stir in roasted coconuts and diced kiwis. 5- Gradually, fold the mixture into the egg mixture. 6- Transfer the batter onto a 9 by 5 bakeware cover with parchment paper. 7- Cover the batter with a layer of sliced kiwis. 8- Preheat oven for 350º F (177º C), bake the bread for an hour. 9- Remove from oven. Allow to cool down. Best served with cheese.
