8 oz (227g) Kataifi (Shredded Fillo Dough) 8 oz (227g) Mozzarella Fresca (Fresh Mozzarella) 4 oz (113g) Unsalted Butter 0.5 oz (14g) Unsalted Butter 1 Cup Sugar 1 Tsp Lemon Juice 1 Tbsp Rose Water 1/4 Tsp Saffron Pistachios Preparations: 1- Soak saffron in 1 tbsp boiling water for 20 minutes. 2- Cut the kataifi to 2 inch short. 3- Slice the mozzarella cheese. 4- Grind or slice the pistachios. 5- Rest the butter at room temperature for 15 minutes. Directions: 1- Combine kataifi and 4 oz (113g) butter until the kataifi is evenly greased. 2- Grease a bakeware with butter. 3- Transfer half of the kataifi to the bakeware and spread across the surface. 4- Lay the mozzarella cheese over the kataifi. 5- Cover the mozzarella layer with the remaining of the kataifi. 6- Preheat oven to 400º F (204º C), Broil the kataifi for 30 minutes. Flip the kataifi (as shown in the video) and continue broiling for another 10 minutes. SYRUP 7- Meanwhile, combine sugar and 2/3 cup of water in a saucepan. 8- Bring the mixture to a boil over medium heat. 9- Turn the heat off, stir in saffron, lemon juice, rose water, and allow to cool down. 10- Pour the syrup over the kataifi. 11- Add some ground pistachios on top and serve.
