2 Lbs (907g) Zucchini 1/2 Cup Whey (Kashk) 1 Tomato 1 Onion 2 Tbsp Vegetable Oil 2 Tbsp Vegetable Oil 2 Tbsp Vegetable Oil 2 Garlic Cloves Turmeric, Ground Chili Pepper, Salt Dried Mint PREPARATIONS: 1- Dice the onion. 2- Dice the zucchinis (keep few of zucchinis for the next steps). 3- Cut the remaining zucchinis lengthwise and spoon out the seeds creating a channel. 4- Skin the tomato, clean out the seeds and dice. DIRECTIONS: 1- Fry dice onions in vegetable oil until translucent. 2- Fry the diced zucchini in vegetable oil. 3- Mash 2 garlic cloves into the onion pot. 4- Stir in turmeric, ground chili pepper, and the diced tomatoes. 5- Continue the heat for 5 minutes. 6- Stir in the fried zucchini to the onions. 7- Sprinkle a pinch of salt and stir. 8- Cover the pot with a lid and simmer for 10 minutes over medium heat. 9- Stir in whey (kasha) to the pot and stir thoroughly. 10- Continue simmering for 5 more minutes. 11- Mash the ingredients together. 12- In a separate pan, Fry the remaining (sliced) zucchinis in vegetable oil. 13- Fill the fried zucchinis with the mashed zucchini. 14- Garnish with dried mint and serve.
