1 lb (454g) Chicken Breast 1 oz (28g) / 1/2 Bunch Cilantro Corn Tortillas Mexican Blend Cheese Monterey Jack Cheddar Asadero Queso Quesadilla 2 Avocados 1 Large Tomato 1 Small Onion 1 Red Onion 2 Garlic Cloves 2 Garlic Cloves 2 Tbsp Vegetable Oil Vegetable Oil 1 Jalapeño 1 Jalapeño 1 Lime 1/2 Tsp Cumin Taco Seasoning Salt Preparations: 1- Slice the chicken breast. 2- Slice the onion. 3- Dice the tomato, Jalapeños, avocados and red onion. 4- Grind the cumin. 5- Mince the cilantro. Directions: WRAPS: 1- Fry the chicken with vegetable oil. 2- Season with taco seasoning and a pinch of salt. 3- Stir in onion and two garlic cloves. 4- Add just enough water to cover the ingredients in half. 5- Cover the pot and over medium heat simmer for 45 minutes with slow cooker. 6- Transfer the cooked chicken over to a working surface. 7- Using forks, shred the beef to your preferred shape. 8- Transfer the shredded beef along with the fried onions and garlic into a large bowl. 9- Add the diced tomato, dice jalapeño (1). And garnish with ground cumin. Stirring until well mixed. 10- Heat the tortillas, add a spoon of the mixture over a tortilla. Cover with a layer of four Mexican blend cheese and wrap the tortilla around and tight. 11- Grease a pan with vegetable oil and place the taquitos onto the pan. 12- Spray or brush the taquitos with vegetable oil. 13- Preheat oven to 425º F (218º C), bake the taquitos for 20 minutes. SIDE: 14- Combine diced red onions, one diced jalapeño, cilantro in a bowl. 15- Mash two garlic cloves over the ingredients. 16- Mash avocados and add to the bowl. 17- Squeeze a fresh lime over the ingredients and stir thoroughly. 18- Serve with the taquito wraps and sour cream.
