EGGPLANT SALAD
2 Eggplants 1 Bell Pepper 1/2 Bunch Parsley (1 oz / 30g) 1 Onion 1 Tomato 1 Garlic Clove 1 Fresh Lime Olive Oil (Approx. 2 Tbsp) Salt, Black Pepper PREPARATIONS: 1- Grill the eggplants and bell pepper. 2- Mince the parsley. 3- Dice the tomato and onion. 4- Skin and dice the grilled eggplants and bell pepper. DIRECTIONS: 1- Place the diced/grilled eggplants, bell pepper, onions, tomatoes, and mince parsley in a large bowl. 2- Add salt (Approx. 1/4 tsp or as preferred) and black pepper. 3- Stir in olive oil. 4- Mash a fresh garlic on top. 5- Squeeze a fresh lime into the bowl. 6- Stir thoroughly.
