Bulgur Salad Mediterranean

1 Cup (#3) Bulgur 4 oz (113g) Green Onions 1 oz (28g) Italian Parsley 7 oz (198g) (Canned or Pre-cooked) Green Peas 1/4 Cup Olive Oil 1 Small Onion 1 Tomato 1 Tbsp Tomato Paste 1 Lime 1 Tsp Ground Cumin Crushed Red Pepper, Salt Preparations: 1- Mince the green onions and parsley. 2- Dice the onion and tomato. Directions: 1- Fry the onions with olive oil until translucent. 2- Stir in tomato paste, cumin and crushed red pepper. 3- Stir in the diced tomatoes and squeeze a fresh lime or two over the mixture. 4- Add 1/4 Cup of water and stir thoroughly. 5- Over medium heat, simmer for 2 to 3 minutes. 6- Stir in the bulgur and as much as salt you'd prefer. 7- Turn off the heat, Cover the pot with a lid and allow to sit for 30 minutes. 8- Add parsley, green onions and green peas to the mixture and stir thoroughly.
