
BRUSSEL SPROUT SALAD
1 lb (454g) Brussel Sprout
1/2 Bunch Parsley (1 oz / 30g)
1/2 Cup Dried Cranberries
1 oz (28g) Walnuts (1/4 Cup)
1 Onion
2 - 3 Tbsp Olive Oil
1/2 Cup Mustard Salad Dressing
Salt, Black Pepper
PREPARATIONS:
1- Slice the onions.
2- Cut the sprouts in half.
3- Mince the walnuts.
4- Mince the parsley.
DIRECTIONS:
1- Transfer brussel sprouts to a baking pan.
2- Garnish the sprouts with salt, black pepper and olive oil.
3- Stir well and cover the pan with aluminum foil.
4- Preheat oven to 400º F (204º C), cook the brussel sprouts for 15 minutes.
5- In a large bowl, combine minced onions, parsley, dried cranberries and walnuts.
6- Remove the brussel sprouts from the oven and set it aside for 5 to 10 minutes until it completely cools down.
7- Add the brussel sprouts to the bowl and stir.
8- Stir in Salad Dressing.
