Black Beans Layered Dip
1 Cup (8 oz / 227g) Black Beans 0.5 oz (15g) Cilantro 0.5 oz (15g) Cilantro 0.7 oz (20g) Green Onions 0.7 oz (20g) Green Onions 3 oz (85g) Shredded Blend of: Monterey Jack, Cheddar, Queso Quesadilla, Asadero Cheese 1/2 Cup Semolina Flour 1/2 Cup All-Purpose Flour 1/3 Cup Flax Seeds 1/3 Cup Sour Cream 1 Avocado 1 Tomato 1/2 Red Onion 1/2 Jalapeno 1 Lime Zest (1 Lime) 1/2 Tsp Cumin 1/2 Tsp Cumin 1/2 Tsp Coriander Seeds 3 Tbsp Olive Oil Salt, Red Pepper Powder Preparations: 1- Soak black beans over night or 8 hours. 2- Chop the Jalapeno. 3- Mince the cilantro. 4- Chop the green onions. 5- Grind the cumin and cilantro seeds. 6- Dice the red onion and tomato. Directions: 1- Using strainer spoon, transfer the black beans to a pot. 2- Add salt and enough water to cover the beans. 3- Cover the pot (leave a gap for steam to escape), simmer the pot for an hour over medium heat (or until beans are well cooked). 4- Peel the skin off avocado and place in a large bowl. 5- Mash the avocado. 6- Add zest and squeeze one fresh lime over the avocado and continue mashing until well mixed. 7- Stir in the jalapeno, cilantro (0.5 oz / 15g), salt, and green onion to the avocado mixture. CRACKER 8- In a separate bowl, combine semolina, all purpose flour, flax seeds, olive oil, cumin (1/2 tsp), coriander seeds, salt (1/4 tsp). 9- While stirring, add 1/3 cup of warm water. Continue kneading until it becomes a soft nonsticking batter. 10- Roll out the batter over a cookie pan (covered by parchment paper). 11- Cut the batter as you would prefer. 12- Preheat oven to 400º F (204º C), bake the crackers for 10 to 15 minutes. 13- Set the crackers aside to cool down. 14- Transfer cooked beans to a large bowl (using a strainer spoon). 15- Add cumin (1/2 tsp), and red pepper powder, and mash the ingredients together. 16- Allow the beans to cool down thoroughly before moving to next step. 17- Stir in sour cream to the beans. 18- Transfer beans mixture to a large bowl. 19- Add a layer of the avocado mixture. 20- Lay the diced tomatoes over the avocado mixture. 21- Cover the tomatoes with a layers of red onions, cilantro, and green onions. 22- Top with a layer of the cheese blend (Monterey Jack, Cheddar, Queso Quesadilla, Asadero Cheese) 23- Serve with the freshly made crackers.
