2 Eggplants 1 oz (28g) Fresh Dill 1 oz (28g) Walnuts (1/4 Cup) 2 Tbsp Vegetable Oil 1 Garlic Clove 2 Tbsp Mayonnaise Salt, Black Pepper, Dried Mint PREPARATIONS: 1- Slice the eggplants and cut out the middle to create a small cup shape. 2- Mince the dill. 3- Mince the walnuts. DIRECTIONS: 1- Fry sliced eggplant in vegetable oil on both side. (Sprinkle with salt, pepper and dried mint while frying). 2- Transfer mince dill and walnuts into a bowl. 3- Mash a fresh garlic on top. 4- Add salt and black pepper as preferred. 5- Mix in mayonnaise and stir thoroughly. 6- Remove the fried eggplants from the pan and place them on a napkin to get rid of the excessive oil. 7- Place the eggplants on a plate and fill with the dill/walnuts mixture. 8- Garnish with minced fresh dill when serving.

  BABA GANOUSH

  • 2 Large Eggplants
  • 4 Garlic Cloves
  • 2 Tbsp Olive Oil
  • 2 Tbsp Tahini (Sesame)
  • 1 Lemon
  • Salt
PREPARATIONS:

1- Grill the eggplants.
2- Peel the eggplants skin.

DIRECTIONS:

1- Grind garlic cloves with a mixer/blender.
2- Mix the garlics with the grilled eggplants, salt, olive oil, tahini.
3- Squeeze a fresh lemon into the mixture.
4- Mix until well blended.
Dust with ? and sprinkle minced ? on top when serving
