STUFFED POTATOES

4 Medium Russet Potatoes 1 Bunch Green Onions 2 Tbsp Butter 2 Tbsp Sour Crean Salt, Black Pepper Powder Colby-Jack Cheese PREPARATIONS: 1- Scrub the potatoes. 2- Mince the green onions. 3- Shred the colby-jack cheese. DIRECTIONS: 1- Poke holes in the skin of the potatoes with a fork. 2- Preheat the oven to 350º F (176º C). 3- Place the potatoes in a casserole dish and place it in the oven for 75 minutes. 4- Cut the baked potatoes in half and scoop out pulp and place in a bowl and mash. 5- Add 2 Tbsp butter, 2 tbsp sour cream, salt, black pepper powder and the minced green onions to the bowl and mix thoroughly. 6- Stuff the potato mixture back into the potato shells. 7- Sprinkle with colby-jack cheese. 8- Preheat the oven to 350º F (176º C) and bake the stuffed potatoes for 15 minutes.
