
Risotto (Parmesan)
2 Cups Arborio Rice 1 Cup Parmesan Cheese 1/2 Cup (4 oz / 113g) Unsalted Butter 5 Cups Beef Broth 1 Small Onion 2 Tbsp Olive Oil 1/2 Tsp Saffron Salt, Pepper Preparations: 1- Soak saffron in 1 tbsp boiling water for 20 minutes. 2- Grate the onion. Directions: 1- Fry the grated onion with olive oil until translucent. 2- Stir in the arborio rice. 3- Over medium - low heat, keep frying while stirring for 10 minutes. 4- Stir in beef broth gradually. Keep the heat for 20 minutes. Keep stirring. 5- Stir in salt and black pepper. 6- Add butter and continue heating until melted. 7- Stir in the saffron. 8- Stir in the parmesan cheese right before serving.
