Hot Zucchini Salad
2 Zucchini 1 Can (15 oz - 425g) Whole Kernel Corn 0.5 oz (14g) Basil 1 Tomato 2 Tbsp Olive Oil 1 Bell Pepper 1 Small Onion 2 Garlic Cloves Salt, Black Pepper Preparations: 1- Dice the onion, bell pepper, zucchinis and tomato. 2- Mince the basil. Directions: 1- Fry the onions in olive oil until golden. 2- Mash the garlic cloves over the fried onions. 3- Stir in bell pepper and zucchinis. 4- Add as much as a salt and pepper you desire. 5- Continue frying for 5 minutes. 6- Stir in diced tomatoes and a can of whole corn kernel. 7- Continue frying for 5 more minutes. 8- Garnish with freshly minced basil before serving.
