EGGPLANT ROLLATINI
3 Eggplants 1 Bunch Spinach 1 Egg 2 Garlic Cloves 2 oz (227g) Ricotta Cheese (1 Cup) 3.5 oz (100g) Mozzarella Cheese (1 Cup) 3.5 oz (100g) Mozzarella Cheese (1 Cup) 1 oz (28g) Parmesan Cheese 12 oz (340g) Marinara Sauce Salt, Black Pepper, Oregano, Ground Chili Pepper PREPARATIONS: 1- Slice the eggplants. 2- Sprinkle with salt and rest the eggplants for 10 to 15 minutes. 3- Dry the eggplants with napkin. 4- Slice the spinach. 5- Grate the mozzarella cheese. DIRECTIONS: 1- Transfer eggplants to a baking pan. (Use parchment paper). 2- Garnish with salt, black pepper and oregano. 3- Cover the pan with aluminum foil. 4- Preheat oven to 400º F (204º C), cook the eggplants for 8 to 10 minutes. FILLING 5- Heat the spinach in a microwave for 4 minutes. 6- Remove the spinach from microwave and set aside until it cools down thoroughly. 7- In a bowl, beat an egg until stiff. 8- Mash two garlic cloves onto the bowl. 9- Add salt and ground chili pepper. 10- Get the water out of the spinach and add to the bowl. 11- Add ricotta cheese, mozzarella cheese, and parmesan cheese to the bowl and stir thoroughly. 12- Spread half of the marinara sauce over the surface of a bakeware evenly. 13- Place a tbsp of the filling over a sliced eggplant and roll the eggplant around. 14- Place the rolls onto the bakeware. 15- Add the remaining of the marinara sauce on top. 16- Add mozzarella cheese on top. 17- Cover the bakeware with aluminum foil. 18- Preheat oven to 375º F (190º C), cook the rollatini for an hour.
