BEET POTATO SALAD
2 Beets 2 Russet Potatoes 1 Onion 3 Tbsp Mayonnaise Salt, Black Pepper PREPARATIONS: 1- Dice the onion. 2- Peel the beets and cut in half. DIRECTIONS: 1- Using a fork, poke few holes into onions and transfer to a small pot. 2- Add salt and enough water to cover the potatoes. 3- Cover the pot with a lid (leave a crack open), simmer for 45 minutes over medium heat. 4- Transfer the beets to a pot, add water and cover the pot with a lid. 5- Cook the beets for 60 minutes over medium heat. 6- Peel the cooked potatoes and dice the potatoes and add to diced onions. 7- Dice the cooked beets and add to the onion and potatoes. 8- Add salt, black pepper, and mayonnaise and stir until well mixed.
