SHEPHERD’S PIE
COTTAGE PIE
1/2 lb (227g) Ground Turkey 1 Can (15 oz / 425g) Mixed Vegetable 2 oz (57g) Unsalted Butter 4 oz (113g) Sour Cream 2 Russet Potatoes 1/4 Cup Shredded Parmesan Cheese (2 oz / 57g) 1 Onion 2 Tbsp Vegetable Oil 1 Garlic Clove 1 Garlic Clove Onion Flakes (1 Tbsp) Curry Powder or Advieh Persian Mix Turmeric, Salt, Black Pepper Powder Dried Parsley PREPARATIONS: 1- Diced the onion and russet potatoes. DIRECTIONS: 1- Fry diced onions with vegetable oil until golden. 2- Mash in a fresh garlic and continue frying over medium heat for 2 more minutes. 3- Add curry powder and turmeric and stir. 4- Stir in ground turkey. Stir thoroughly and over medium heat, continue the heat until the turkey turn brown. About 10 minutes. 5- Add as much as salt and black pepper you would prefer. 6- Stir in a can of mixed vegetable. Stir well and turn of the heat after 2 minutes. 7- Transfer the diced potatoes to a small pot. 8- Add salt and enough water to cover the potatoes. 9- Cover the pot with a lid. Over medium heat or medium-low heat, simmer the potatoes for 20 minutes or until the potatoes are fully cooked. 10- Using a strainer spoon, transfer the cooked potatoes to a large bowl. 11- Mash a fresh garlic clove, add onion flakes and butter to the a bowl. 12- Mash the ingredients together until well mixed. 13- Stir in sour cream and fold until well combined. 14- Transfer the ground turkey mixture to a rectangular casserole dish. 15- Top the ground turkey mixture with the layer of the potato mixture. Spread the potatoes evenly across the dish. 16- Garnish with shredded parmesan cheese and dried parsley. 17- Preheat oven to 350º F (177º C), bake the pie for 20 minutes.
