Directions: 1- Combine wheat flour, instant yeast, salt (1.5 tsp), and olive oil (2 tbsp) in a dough mixer. 2- Gradually add 1 1/4 cup warm (100º F to 120º F) (38º C to 48º C) Water to the mixture while stirring. 3- Continue kneading for 5 to 7 more minutes. 4- Grease a bowl with olive oil. Transfer the dough onto the bowl. Cover the bowl with a plastic wrap and set aside to rise for an hour. 5- Combine ricotta cheese, olive oil (2 tbsp), salt and pepper, and feta cheese. 6- Mash a fresh garlic cloves on top and stir thoroughly. 7- Grease a pizza pan with olive oil and sprinkle with flour. 8- Roll out the dough over the pizza pan. 9- Poke holes into the dough using a fork. 10- Spread the cheese mixture over the dough. Top with fresh basil, followed by mozzarella and parmesan cheese. 11- Preheat oven to 450º F (232º C), broil the pizza for 15 to 18 minutes.
